What Buck Wore


I love love love little boys in flannels and jeans. I think it's so cute! And since it's been pretty chilly out I decided that's what Buck would wear when we went out to his doctor appointment.

It's Okay..


I decided this week I would link up with the super sweet Kera for her weekly "It's Okay" link up! So here goes!

It's okay that I'm not liking cloth diapering today, the washing process can be a big pain in the butt!
I think the cuteness (and money saved) makes up for the washing!

It's okay that I'm super excited that Lyla is out of school for the week and we don't have to make the short (15 min) commute to school all week! It's kinda a pain with 2 kids! Thank god for babywearing!

It's okay that I'm feeling super anxious about Christmas/Lyla's birthday!

It's okay that I started planning Lyla's party last month!

It's okay to have major baby fever right now since my BFF just had her adorable baby girl yesterday!

It's okay that I've been buying A LOT of books for my kids lately. Especially holiday themed ones.
I had no idea that when I ordered this it was so small! A book isn't something I'd think I need to check the dimensions on!

Easy rolls


I made these rolls last Thanksgiving and they were a hit! And really easy to make! I thought I'd share the recipe in case anyone was looking for Thanksgiving recipes.

1 c. plus 2 Tbl. warm water
1/3 c. vegetable oil
2 Tbl. active dry yeast
1/4 c. sugar 
1/2 tsp. salt
1 egg
3 1/2 c. all-purpose flour

Preheat oven to 400 degrees.  In the bowl of a stand mixer, combine warm water, oil, yeast and sugar; let rest for 5-10 minutes or until frothy and bubbly.  With a dough hook, mix in salt, egg and 2 cups of flour until combined.  Add remaining 1/2 cup flour at a time (dough will be sticky).  Spray your hands with cooking spray and shape the dough into 12 balls.  After shaped, place on lightly greased cookie sheet and let rest for 10 minutes.  Bake for about 10 minutes or until tops are lightly golden.  Yield: 12 good-sized rolls.

Enchilada Dip



I've been meal planning for the last month and scouring pinterest for new meals to add to my menu.. I made tacos one night and had been dying to try this recipe for beef enchilada dip. It was really good! I didn't drain the grease out of my ground beef very well though so it was a little on the greasy side.

Ingredients:
1lb ground beef
 1 package of taco seasoning
1 small can of enchilada sauce
1 package of shredded mexican cheese
1 small can of sliced olives
tortilla chips

Brown the ground beef and cook in the taco seasoning according to the directions on the seasoning packet.
Add in the enchilada sauce (you probably won't need the whole can).
Transfer it into a 8x8 baking dish, put the cheese and olives on top and bake on 350 for about 8-10 mins to melt the cheese. Then enjoy!

Holiday Gift Exchange



I had the privilege of being a part of the super sweet Aleisha from Britches & Boots ornament swap. It was a lot of fun and I wish I could find the picture of the beautiful ornament I received. Messes..



Sometimes you have to just let your kids make a mess.. I know it's hard to watch and even when they promise you they'll clean it up (and you know they won't). Plus, when you see how much fun they're having it's all worth it.

Pumpkin Patchin!


 We went to 4 different pumpkin patches this fall.. One was for a school field trip and it kinda sucked.. In and out in less than an hour. Another one we went to as a family and it was "ok".. They had a train that the kids loved but hubby was not impressed with the ticket price of the train. The other 2 we went to with our good friends and we had sooo much fun. We played, ate lunch, fed animals and got some yummy apple cider and cider donuts.

I wanted to go to an apple orchard but I think it might be to late in the season now..

Halloween!



Thursday morning Adam woke me up at about 5am and asked if he stayed home from work if I'd take him to urgent care when they open because he's been sick and his throat was so swollen that he was having trouble breathing.. Umm, yeah! Well Buck has also been sick and his cough has gotten kinda bad so I figured we should have him seen too.. Hubby has a pretty yucky viral infection and Buck has croup! Sad.. 
The forecast was calling for rain and it looked kinda yucky out. I didn't want Adam or Buck to go trick or treating if it was cold out. But we ate dinner, got the kids ready and went out.. And surprisingly it was warm out! We had a lot of fun! Especially Lyla.. We met up with our neighbors that have a 3yr old and a 6yr old and they ran from house to house. We live in a big housing development in a small town and usually there's a lot of houses to go to but not this year, kinda sucked!
 I made "mummy dogs" for dinner and then realized Lyla had no idea what a mummy even was!!
