Beef Stew

I love to eat beef stew during the fall/winter! It's easy, makes your house smell good, tastes deee-licious and warms you right up. I'm sure many people have recipes for it but I decided to share anyway.



Ingredients:
2lbs stew meat
1tbsp olive oil
2 cans/boxes of beef stock
1 pkg stew seasoning
1pkg brown gravy mix
1 can corn
1 carrot (or some baby carrots)
4 potatoes
2 cups water



1. Put the tbsp of olive oil into the bottom of a large sauce pan and brown the meat. (I cut the pieces of stew meat in half to make more and it's just easier for a three yr old)
2. Once the meat is browned I poured in the 2 boxes of beef stock and let the beef simmer in it for a little while, maybe 30-45 minutes.

3. Add in 2 cups of water and the packet of stew seasoning. Make sure to stir it well because the seasoning sometimes clumps up.

Depending on how early you start it will depend on how long until you put in the veggies. If you put the potatoes and carrots in to early they get to mushy. I started cooking at 1pm, put the carrots and potatoes in at 4:15 to eat at 5:30.

4. Put the corn in, continue to boil.





As another option you can put in other veggies, such as.... Peas, green beans, lima beans, celery.

4. Cut up carrots and peel/cut potatoes. Add to pot. If the liquids don't cover the potatoes add a little more water. Let simmer until about 15 minutes til time to eat. Then kick it up a notch and boil it to ensure that the potatoes get soft enough for your liking.

5. Add the brown gravy mix, also stir really well while doing it or it will clump.

6. Serve! And ENJOY!
