Caribbean Fruit Chicken

On Sunday we tried a new salsa, Caribbean Fruit Salsa. It is so yummy! Have you tried it? I bought it at Safeway (Vons) but I'm sure there are other stores that sell it. Anyway, I decided to try it on chicken over rice. It was pretty yummy but I think I'd try something different that I'll talk about later.

Ingredients:
1 tub Caribbean Fruit Salsa
1.5lb boneless skinless chicken (I cut it into little pieces)
1 small can pineapple tidbits
1.5 cups instant rice

1. I cut the chicken into bite size pieces and cooked it.. I also added a little season salt (I have to when I cook anything) and some red pepper flakes.

2. I added the salsa and pineapple next. I also turned down the heat a little so it wouldn't over cook the chicken or the salsa.

3. I cooked the rice.. haha sorry no pics of that excitement!

4. Put the chicken over rice and serve!

So I thought it was pretty good but I kinda like things to be saucy so I think next time I would add a little sweet and sour sauce and it'd be perfect!

Family

My husband's best friend Chris lives about 3 hours north of us and we really don't get to see them often because both of these guys work A LOT. So I was pretty excited to hear from Chris that they would be down in our area this past weekend and asked if we all wanted to get together for breakfast Sunday morning.. Would we?? Of course!! We also invited Adam's (hubby) parents. So all 10 0f us gathered for breakfast and had some good conversations and fun! We were planning to go to Adam's parents afterwards so we invited Chris and his family.

Here is a peek at what we did with them yesterday!

We decorated onesies for the baby! This is one Lyla and her buddy Logan (6) did.

I did this one with a little bit of help (the pink spot) from Lyla! I did another but I guess I didn't take a pic of it.

Lyla did this one all by herself!

Lyla and Logan did a lot of playing which made them soooooo hungry! Aren't they just adorable together?

I had to throw this one in cause she just looked so cute!

We had a pretty good day with our friends/family. I really hope that we can all get together more often.

Toddle Along Tuesday

I don't participate in these often but I should! So this weeks topic is your favorite baby item. I have a few that I'd like to share..

The boppy pillow is great for breast feeding and for keeping the baby in place on the bed or something like that. (Do not leave baby unattended) I found this really helpful after I had my gallbladder taken out and couldn't put my daughters weight on me, I could lay her on the pillow that was around my waist and nurse her without pain.

I didn't have one of these with my daughter but I'm planning on having one for this baby. With my daughter I had one of the cheapy ones known as a "crotch dangler". I didn't use it with her very often either but I foresee using this a lot to make it easier to still do stuff with my daughter. So an Ergo it is!

I also didn't know about these when I had my daughter but it's a pacifier thermometer. I tried ear ones, underarm ones, forehead ones and I never liked them so I really hope these ones do. There are a few different companies that make them but the ones I got as a shower gift are Safety 1st.

Terrible 3.5's

You've heard of the terrible 2's right? Yeah, Lyla didn't go through those. She was a great 2 year old. She's definitely going through them now! Here's a little story to explain some of her behavior.. Last week we got home from the grocery store and she decided to go play in the backyard. Our yard is fenced in and she's gone out there by herself many times. She came in a few minutes later and asked if she could go to the neighbors house. I said no because we barely know them! She came and asked a couple more times, I still said no and told her that maybe the other neighbors that we do know could come over later. I go outside to check on her a few minutes later and she was gone! I panicked! But then I saw her through the fence in their backyard! (*Side note, if a 3 year old showed up at my house I'd be damn sure I'd find out if the parent actually okayed it) I went next door and got her and she tried to run from me.. My equilibrium is totally off from being pregnant so I tripped and fell! Thankfully I landed on my back not my belly. But I got her in the house and she was FREAKING out, trying to get back out and screaming/crying. I put her in her room hoping she'd calm down and take a nap. Nope! I go in there and she has her window open and she's up in the window sill yelling to the neighbor girls!

After all that and when I finally got her to lay on the couch and calm down she fell asleep so I called my husband and told him he needed to stop on the way home and get childproofing stuff! And she is not allowed in the backyard alone for awhile.

This is in the top of the sliding glass door. You screw it in and out of a hole you make in the door.

Front door. I bought the cheap ones before but she can just pop them off. These I bought on amazon and most adults have a hard time opening the door with it.

And her bedroom window. It screws tightly on the tracks of her window.
All in all a pretty horrible experience but I hope to not have a repeat of it!

Nursery pics!!

The baby's room is almost done! I just need to get a couple more things for the walls but other than that it's done! Sorry about the weird angles of the pics, the room is kinda small.

The Route 66 sign is actually a clock. The hands are wrenches and it has a neon blue light around it. The cubby thing is what we're using for a dresser.

The chair we put in there actually goes with our living room set. I couldn't find comfy chair that I liked and I loooove this chair so I decided we'd put it in there.

Adam had to have this decal for the wall.

And Mrs. Sassy Pants Lyla had to have a picture too.

My baby shower was yesterday and I got so much great stuff! I'll be doing  post on that soon. Have a great week!!
